Last night I did a little reading on the way home. Apparently I can make a curry in a crockpot.
When I got home I seasoned my 2 chicken leg quarters with some tomato paste, 1.5 t curry powder, and a half teaspoon ginger powder.
I put that in a ziplock with a couple handfuls of chopped onions. This morning I took out the frozen onions and put a couple handfuls in the crock pot. I got out about 2 cups frozen mixed vegetables: green beans, carrots, corn, peas. I went through them and pulled out all the green beans. I chopped half a potato and added that. I pulled out the fresh ginger and chopped about 2 T. I put that all in the crock pot. If you want to make this I would put a couple cloves of garlic (whole) but I'm allergic.
I put about 3 more tablespoons of the tomato paste in the pot and 2 cups chicken broth. I put the crock pot on the timer so it will cook about 8 hours on low.
We'll see how it turns out.
Work was more drama than I would have liked. A problem customer. I didn't feel safe. He's gone now.
