It's a cold and miserable day, good for cooking at home.
I did the lentils and got the pork roast processed (?) took it off the bone pulled off the icky parts, just good meat and juice in the containers. I didn't have enough room in the freezer so I have about a cup and a half of cooked pork roast and another cup or so of juices in a quart freezer bag in the freezer, plus 4 meals in the fridge. NOT BAD that was a $3.50 roast. 50 cents for the crock pot liner maybe a dollar for the seasonings So that's done.
Next up I have beef neckbones (they looked so good I had to buy them). My friend who cooks soul food says cook them with potatoes. Online recipes with good reviews suggest red wine (I have some), tomato paste (check), and smoked paprika (check). That is the nice thing about a well stocked pantry. I also have beef broth.
I have shredded beef "for tacos". Since I live in a mixed neighborhood they tend to have a fair amount of budget meats but not really a lot of offal, thank God. They do have things like chicken backs, gizzards, etc.
On a side note I am thinking about making some Savoie's rice dressing for Christmas. That uses some of the chicken "inside parts".
Anyway with the shredded raw beef I will cook some in the skillet, plain, for Cleo. Cleo is a meat lover who never misses a meal. The rest I am thinking to split, cook half with some onions and peppers, put that in my breakfast (more in a minute). Then some for stir fry.
For the breakfast I have ground sausage I will cook, saute the beef. Combine that with some cheese and maybe some cottage cheese in a pita and have that for breakfast. I would have the filling in a separate container, heat it up, and then place in the pita.
I also got a little tray of the chicken leg quarters, I can do a lot with them for $4.
That's plenty of food for a while.
