A while ago I took a packet of generic brand Emergen-C. I like powdered vitamin C, love it in fact, I need to buy another jar.
I am one of the people who reacts to a large dose of niacin by having the "flush". My skin gets very bright red. I was cooking (meal prep) and saw my hands were blotchy and red. I almost had a heart attack thinking I was having acute anaphylaxis (Anaphylaxis is a severe, life-threatening allergic reaction that can occur rapidly after exposure to an allergen.) It will kill you.
I figured it out before I called 911 I would have been so, so, embarrassed. It can be very frustrating explaining food allergies. "The new girl" in my department was telling me I would be fine eating any of my allergens if I "just took some Benadryl first". My mother did that. It's not smart (she died of a heart attack unrelated to her food allergies).
But I was fine. I decided to make a lentil chili in the crock pot, prepare it tonight, put it in the fridge. The trick I have I use a timer. So the crock pot goes in the warmer very cold from the fridge, sits there an hour or two, warming up to room temperature, and goes on, cooks all day, warm when I get home. You can't put a cold crock pot in a warmer and turn it on directly, you would crack it (physics). I'm glad I figured this out. I used a liner too so easy time.
I couldn't decide which chili powder to use so I used both. I don't use set recipes really, when cooking for myself. I can generate a recipe if someone likes a particular meal, though. Anyway I have found about 1 t chili, a can of tomato paste, 1 t cumin, 1/2 t oregano. But I wanted "better" on the last 2 spices. I bought some "Southwest Spices" at the grocery and was not expecting much, they were very cheap, although generous bags. I figured they couldn't be any worse than what I can get at work.
Boy was I wrong. I cut open the little plastic bag for the whole cumin seed and the fragrance blew me away. Same with the oregano, this is going to be fantastic. I used that, onion, some shredded carrots (most Texans would be very upset I put carrots in my chili but I need more vegetables), a can of tomato paste (I love lentils with tomatoes), the Kashmiri chili (from India) and Chipotle chili (from Mexico). I like the diversity there. I tasted it before I put it in the fridge (I had soaked the lentils, drained, and rinsed them earlier) and it was fantastic. The chili powders are very deceptive, they seem almost bland, swallow, and then WHAM. There it is!
I should have sauteed the onions, then added the spices, then the tomatoes and carrots. I didn't do it that way and I don't feel I properly heated the spices. But we'll see. I did a cup and a half of dry lentils and the crock pot is almost full. It will be something to look forward to.
I put something in front of the door to remind me to put the crock pot on, I didn't do that the other night and came home to an empty, cold, kitchen.
And I need to go to bed so that's it for now.
